A rare micro lot from Mt. Halu, West Java, NATCHA LOT 1 #08 represents an uncompromising approach to experimental coffee processing. Designed as a limited release, this lot combines thermal shock, rehydration, controlled fermentation, and carbonic maceration to create a cup of striking texture and layered sweetness.
The process begins with a 6-hour thermal shock at 65°C, followed by rehydration, pulping, and a 12-hour dry yeast fermentation. It then undergoes 48 hours of carbonic maceration at 3°C with white wine yeast under oxygen-controlled conditions, finished with an 8-hour lactobacillus stage. The result is a refined and highly expressive coffee that pushes the boundaries of modern processing.
